Happy 4th of July!
Today is a great day to remember what it truly means to be an American, to remember those who have fought for over 200 years for our freedom, to say thank you to all of those who have given their lives to makes sure we live ours the way we currently do!
It is raining here – it has been all day! Good thing we grilled out last night before heading to the balloon glow and fireworks! I made these fantastic vegan burgers (above) and was going to make cilantro lime quinoa salad but realized I did not have lime or cumin so switched gears. I did a little searching and some improvising with what I did have on hand and came up with a pretty good substitute. The limes I thought I had on hand were actually lemons. I have never added lemon to quinoa before but I think it turned out pretty good!
Lemon Mustard Quinoa Salad
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 Tbsp olive oil
- 1 Tbsp brown mustard
- 2 Tbsp lemon juice
- 1 clove garlic, minced
- 1/4 cup cilantro
- 1/2 cucumber chopped
- 1 red pepper, chopped (or color of choice)
- 1 cup edamame
Prepare 1 cup of uncooked quinoa by bringing to boil with either 2 cups of water or vegetable broth. Once it comes to a boil, cover, reduced to simmer, and cook for 15-20 minutes until liquid is absorbed. Fluff with a fork and let sit to cool down.
While quinoa is cooking prepare the dressing by combining: olive oil, lemon juice, garlic, and cilantro.
Add cucumber, red pepper, and edamame.
Add Quinoa. Mix together and chill before serving.
This dish made a fantastic side dish for the grill out! It would be fantastic with corn as well – again something I thought I had on hand and did not. We happened to have corn on the cob along side of it though. It made for a fantastic compliment.
It has rained a lot here in Cincinnati – like really A LOT!
Check-in on my 20 day challenge: I have run/walked 8 miles. The rain has made it pretty hard. Working out in the morning every morning for 10 minutes has been a huge fail! I have done it about half of the days though which has been a pretty good number I suppose. I did not this am either. I was too sleepy from all the fun we had last night and my allergies are just going nuts! Food-wise I have done great! I haven’t been eating out and I have made sure to prepare food for long days out of the house as well! So for the halfway point I think I am doing OK!
