Have you missed me? I’ve certainly missed all of you! What a crazy week it has been! On Saturday my friend, Tyler and I participated in the Race for the Cure in Downtown Cincinnati. It was a fantastic event! So much emotion and love … And PINK everywhere!
The rest of the weekend was full of the usual: church, family, the gym, a party (happy birthday Mac!), and general craziness preparing for the week ahead!
It was a terrific weekend really. The weather was amazing and we were surrounded by great company!
On Saturday I got a wedding invitation in the mail. I designed the invitations for this wedding which made it extra special :) I love seeing my work in print! I can’t wait to finish making the rest of the pieces for these awesome people!
My Etsy shop has been really amazingly busy lately. I love all of the orders coming in. It is great making work out of things I am passionate about.
On Saturday evening I decided to curiously watch the first episode of little show called Breaking Bad, you may have heard of it… Needless to say I am now HOOKED! OMG! Seriously it is so intense. (Secretly I think that is the REAL reason for part of my absence)… Shhhh!
Fast forward to this week…Tyler had his first officially school pictures on Monday – isn’t he handsome!?
And we started soccer games… 3 games this week makes for one tired mama (did I mention that I am also the coach) and an even more tired and irritable little boy! One more game tomorrow and we have a week off! The kids are seriously too cute though! I have really been enjoying coaching. But since I am coach the kids and keeping them focused I can’t take many pictures. I snapped this gem today though :)
In the midst of all of my busyness I have put together a few little meals that took no time at all and were absolutely delicious! So I guess you get a little bit of a WIAW after all – it’s just not eats from one specific day but a bit of random over a few days!
So Monday I ate chips and salsa for dinner. That is all. And it was amazing! I love homemade salsa… I’ve been eating it with my meals all week. More on that later!
Tuesday I had said salsa with garlic and herb soft shells, spinach, and avocado. Pretty good as well.
But the real treats was today. I used the same combination as above but toasted the shells and added hummus! Oh my goodness, so amazing! I promise I will post the salsa recipe soon! It kicks butt of my first salsa recipe (hint: tomorrow is throw back Thursday).
Last night and tonight I put together a combination of zucchini, tofu, sautéed kale, and tomato sauce in the skillet for a quick and easy meal! I love having tofu around for quick meals!
So there you have it! It’s possible to follow a vegan diet even when you are on the go, in a hurry, and generally unprepared! I feel like that is me 99% of the time. I feel I should have named my blog “Vegan on the Go” instead! Hmm… What do you think about that??
