Lately I have been CRAVING easy salad combinations, hints my post earlier this week. They are easy to make ahead of time and include in work lunches! Beats going to a restaurant!
I really wanted to make a lime dressing to toss this in and be sure to include LOTS of cilantro! Something about cilantro, lime, and black beans just creates perfect harmony in my opinion! And so was born this wonderful creation…
Black Bean Cilantro Lime Salad

(I think it could probably use a shorter title ;p )
(serves 4)
Ingredients:
- 1/2 lime, juiced (approx 2 Tbsp)
- 2 Tbsp extra virgin olive oil
- 1/2 tsp chipotle pepper
- 1 tsp cumin
- S & P to taste
- 1 can organic black beans, drained and rinsed
- 1 cup organic frozen corn
- 1 cup fresh cilantro (dried will NOT work for this one)
- 1/2 red onion, diced
- 1 green, red, or yellow pepper, chopped
Directions:
Combine lime juice, olive oil, chipotle pepper, cumin, salt, pepper. Add the black beans to the mixture and let soak for a few minutes. While beans are soaking, chop the cilantro and red onion.
Combine the rest of the ingredients and mix well. I found the easiest thing to do is top the bowl with a lid and shake it up.
Of course, taste test after everything is mixed together. I added more seasonings to mine – I love a little kick!
Today was day three of eating this salad for lunch and it still tastes fantastic! I have added tomatoes and avocado as toppers as well as eaten this with chips. I recommend eating this salad at room temperature opposed to straight out of the refrigerator.
